Peppermint Protein Chocolate Bark

Makes 8–10 pieces

Ingredients

  • ½ cup dark chocolate chips (or sugar-free chocolate chips)

  • 1 scoop vanilla or chocolate protein powder (whey isolate or plant-based both work)

  • 2 tbsp plain non-fat Greek yogurt

  • 1 tbsp unsweetened almond milk (or water)

  • ¼ tsp peppermint extract

  • 1 sugar-free candy cane, crushed (or 1 regular mini candy cane – only adds ~2 calories per piece when divided)

  • Pinch of sea salt (optional, but chef’s kiss) 

Instructions

  1. Melt the chocolate chips in the microwave (30-second bursts, stir until smooth).

  1. In a small bowl, mix protein powder, Greek yogurt, almond milk, and peppermint extract until you get a thick, frosting-like consistency.

  1. Line a small tray or plate with parchment paper.

  1. Spread the protein mixture into a thin, even rectangle (about ¼-inch thick).

  1. Drizzle or swirl the melted chocolate over the top.

  1. Sprinkle crushed candy cane and a little sea salt.

  1. Freeze 1–2 hours until solid. Break into pieces.
