Ingredients:

  • 2 eggplants
  • 3 tbsp. lemon juice
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 garlic clove, minced
  • 3 tbsp. tahini
  • 1 tbsp. olive oil
  • 2 tbsp. pine nuts
  • 1 tbsp. parsley

Directions:

  1. Preheat oven to 375°F.
  2. Bake eggplants whole on a baking sheet, about 45 minutes.
  3. Cut eggplants in half and scoop out flesh.
  4. Place eggplants, lemon juice, salt, pepper, garlic, tahini, and pine nuts in a food processor, and blend until smooth.
  5. Transfer to medium bowl. Slowly stir in olive oil and parsley.
  6. Serve with pita bread.
