Ingredients:
½ cup water
1 tsp. coriander
2 tsp. cumin
1 tsp. salt
1 tsp. pepper
1 lb. extra-lean ground chicken
1 tbsp. olive oil
2 cups onion, diced
4 garlic cloves, minced
½ cup corn
½ tsp. chili pepper
2 cans diced tomatoes
2 cans kidney beans
½ green pepper, chopped
1 large jalapeño pepper, seeded and finely chopped
2 tbsp. cilantro, chopped

Low-Fat Chili

Spice things up by trying this low-fat chicken chili recipe. Flavoured with savoury spices such as cumin, pepper and coriander this meal is sure to heat things up! Not only is this recipe low in saturated fat, but the kidney beans and corn provide excellent sources of fibre.

Directions:
1. Combine water coriander, cumin, salt, and pepper in a large saucepan. Bring to a boil.
2. When water boils, add ground chicken. Lower heat and cover saucepan. Let simmer for 20 minutes.
3. Remove chicken from saucepan.
4. Heat oil in saucepan over medium heat. Add the onion and sauté for 5 minutes. Add garlic.
5. Stir in corn, chili pepper, tomatoes, beans, green pepper, jalapeño, and cilantro. Heat through
6. Add chicken. Let cook on medium heat for 20 to 30 minutes.
7. Remove from stove and let cool before serving.
8. (Optional) Serve over a bed of brown rice.
