Ingredients:
1 tbsp. soy sauce
1 tbsp. white wine
2 tbsp. dijon mustard
2 tbsp. chives, chopped
1 tsp. olive oil
1 clove garlic, minced
1 tsp. ginger
4 boneless, skinless 4 oz. chicken breasts, chopped
12 mushrooms, sliced
12 cherry tomatoes
1 onion, cut into eighths
1 green pepper, diced
3 canned pineapple rings, quartered

Directions:
1. Preheat oven to 350°F. Combine soy sauce, white wine, mustard, chives, olive oil, garlic and ginger in a medium-sized bowl.
2. Place chicken in a deep dish. Baste with soy sauce mixture and let marinate for 1 to 4 hours.
3. Thread skewers, alternating between chicken and vegetables.
4. Cook until chicken is no longer pink inside (about 20 minutes).
